The blade carriage slides on sealed bearings along stainless steel rods, with fully enclosed springs to prevent entry of moisture and debris. Allows tenderizing a whole block of meat before slicing it, with no fiber tearing or shape changing for an appealing, chewable product. Movable and removable cutting board for convenient operation. Easy breakdown and assembly of the blade set, consisting of 32 removable and replaceable blade strips. Clearance: 4 3/4” - 30 square inch area per cycle.
