Legend can be used in manual and electric mode. It’s up to the operators to choose. In electric mode, they just have to pick up the sliced product and put it on the tray since the blade rotates autonomously as the carriage moves forward. In manual mode, they can opt to move the carriage forward or start the carriage and the blade.
Traditional flywheel slicers have three movements enabled by rotating the flywheel: the blade, the carriage and the tray, which moves forward based on the set slice thickness because it has no gauge plate where to place the product. Since Sirman’s Legend model runs both manually and electrically, it is fitted with a gauge plate to increase safety. This way, the product can be placed on the gauge plate to align it to the blade’s cut. With traditional flywheel slicers, the operator needs to make a few tests before getting the first slice right, inevitably producing waste. Legend’s removable gauge plate solves this problem because the operator can cut the first slice with the desired thickness.
Despite the typical flaming red colour hints at vintage models, the Legend slicer is not a revamped vintage product but the result of aesthetics and mechanical studies to ensure ease of use and cleanliness. Legend is the only flywheel slicer on the market that allows users to remove the carriage for cleaning operations.

The art of slicing
